Have you seen any 30x40s with a font different from the funky text?

Well, I am pretty sure that the one I own doesn't have it, but it may have just cut the whole thing off, although I don't think so...

The images in Bruce's database are either cut off completely or have the more standard text.

Which brings up something I have been wondering for years.  If you look at Bruce's listings, you will see that he has pages of 1 sheets in his history.  This has got to easily be the most collected paper in the hobby.  I suspect that since the darned movie played in theaters for over a year, every single poster ever printed was saved by someone.  I doubt if even one ended up in the trash.  Add to that, this is a very heavily reproduced poster, both legit and bootleg.  The average guy who wants the image on his wall has no problem plunking down $20 and getting something reasonable.

So why does the value keep climbing?  Every serious collector likely has a couple in their collection, even if they didn't particularly like the movie.  They come up for sale every week, yet the prices keep going up.  It seems to defy the laws of supply and demand.

Because it is the most iconic image for the most iconic film of a generation.  If you said the words 'movie poster' to an average Joe off the street, that Star Wars Style A image would be very high on the list of first posters mentioned, particularly for a group of a certain age.

It's supply and demand. There are plenty of silent posters where there are only one example known, but NO ONE is particularly looking for it, so it keeps selling for a relatively low price.

If there are 500 of an item, but 501 people want to own it, the price will rise. When those numbers shift, the price will fall. But in the case of Star Wars, that may be many years off (and many dollars higher than current prices).
